Delicately flavored sprouts (microgreens) can be used as a garnish for the salads and can be harvested approximately 20 days. Older leaves can be cooked like spinach, as well. The seeds can be eaten raw, roasted or ground into flour for gluten-free baking. It is an ancient grain, fiber source, gluten-free, amaranth oil made from the seeds good for skin and hair use, annual herb.
Because of its stunning height, seed-filled flower heads make a great source of food for goldfinches and other birds flying by. The blooms make a beautiful cut flower arrangement.

Tolerates drought once established, but greens are more tender when watered regularly. Very pretty plant with new growth when Summer temps calm down.
Amaranth is a high protein grain that has considerable potential as a garden scale grain crop. It is of particular interest because it can be used immediately, without any hulling, leaching or other processing.
Note: This is a beautiful plant and just when you think it has come to an end and allowed to hang in there a bit longer, it will start sprouting new growth when the temps cool down after Summer. New stems will begin to emerge with beautiful leaves and plumes. Living in Texas I water mine daily and it does great. Sometimes needs staking during high winds.
