A large leafy vegetable with beautiful maroon color leaves. Goes very well in salads, soups, stir fry and mustard oil.  Robust flavor, like sharp garlic mustard flavor.

Grows beautifully and easy in medium to large containers or direct sow in well draining soil.

Red Giant Mustard is winter hardy in most zones and slow to bolt. Full size leaf harvest is about 45 days from planting.  For best flavor plant in early spring or fall.

You can direct sow in early spring, full sun, about 4 weeks before your expected last frost date. Lightly rake seeds into soil in rows 10 – 12” apart. When seedlings come up thin the plants 6” apart.  For a continual harvest plant mustard green seeds about every 10 to 14 days. For Autumn planting, plant seeds about 10 weeks before expected first frost date.

Add a thick layer of mulch after plants get about 4 to 5” tall to help with moisture and control the weeds.

To harvest by the “cut and come again” method, wait until plants are 4 to 6 inches tall. Cut as much as you need, using scissors to shear off a patch of leaves about 1 to 2 inches above the soil level. Water well and fertilize lightly and plants will regrow for several more cuttings.

Blanch in boiling water to help with any bitter taste – this helps to remove the bitterness and soften the greens, Blanch, then sauté with bacon and onions, etc. Massage with oil if you eat it in a salad. They say eating it raw gives you the full impact of the vitamins and minerals this wonderful vegetable offers.

If you want to get a jump on your harvest plant seeds indoors about 4 weeks before your last frost date. Harden off and plant outside when temps reach a consistent 40-50F. Although, this is an easy plant to grow from seed and germinates easily in temps from 15 – 50F.
