Black Beauty Zucchini is an heirloom Summer Squash that produces 6 to 8 inch long fruits. The outer skin is a dark green almost black color, with a creamy white inner flesh. Each plant grows to a mature height of roughly 12 to 24 inches tall, displaying a bush like growth habit.

The bush-type plant is early and very productive. Although you can use this summer squash at just about any size, I start picking fruit when they are about six to eight inches long by two inches in diameter and dark green in color. I prefer them at this young and tender stage when they are excellent lightly steamed, sautéed, or stir-fried. They reach a black-green to almost black at maturity.

During the "high season" of summer, unless you are checking your plants daily, the fruit size can get away from you very quickly! Medium sized to large fruit can still be cooked in the same way as noted above.

When to Sow Outside: 1 to 2 weeks after your average last frost date, and when soil temperature is 70°–85°F.
When to Start Inside: Not recommended except in very short growing seasons, 2 to 4 weeks before transplanting. Roots are sensitive to disturbance; sow in biodegradable pots that can be planted directly into the ground. Transplant when soil temperature is at least 60°F.
Harvesting: Harvest frequently to increase yield; squash seem to get monstrous overnight. While edible at almost any size, seeds are less developed in young fruit, therefore more tender. Using a knife or clippers, cut squash off including some of the stem. By including stem, the fruit is sealed and less likely to mold or dry out. Harvesting Blossoms: Look for male, non-fruit producing flowers that have long stems and harvest just before use (female flowers have a swollen mini-squash at the base of the flower and are on shorter stems).
